I love bananas. Bananas are the most common edible fruit, and a good source for vitamin B6 and potassium, and as crazy as it sound – the skin can be eaten as well. Did I mention that “I love bananas.” These oddly shaped jewels can be prepared in so many ways – deep-fried, baked, steamed – made into jams, pancakes, chips, breads and cakes. I highly recommend this yellow wonder becomes a staple in every kitchen. My recent purchase of bananas resulted in several over ripe bananas – what’s a banana lover to do? Well, make banana cake!
I found this perfect recipe for banana cake online “Best Ever Banana Cake w/ Cream Cheese Frosting.” I agree. The batter taste like banana pudding, and the cake “Awesome!” The process is similar to making a red velvet cake, but without the mess. Simple and easy!

The base ingredients are flour, baking soda, salt, butter, sugar, eggs, vanilla and buttermilk. I guess you could substitute the bananas with mixed berries and it would be just as good. This will easily be my go to for birthday cakes, wedding cakes and just because cakes.
